Undoubtedly, within brunching circles, solid indicators of a quality establishment can be any – if not all – of the following; glasses of cold cloudy apple juice made fresh before your eyes, monogramed crockery, the choice between boiled hens or duck eggs with your soldiers, muesli adorned with elderflower honey and hazelnuts, teapots that are not made of metal and a notable absence of judgement should one decide to sample the extensive wine selection over brunch on a weekday. The best sort of place will do them all. Classified, it was an honour to have my very first meal that I ever did eat in Hong Kong, in your top quality establishment.
