Within brunching circles, solid indicators of a quality establishment can be any – if not all – of the following; glasses of cold cloudy apple juice made fresh before your eyes, monogramed crockery, a choice between boiled hens or duck eggs to accompany your toast soldiers, muesli adorned with elderflower honey and hazelnuts, teapots that are not made of metal and a notable absence of judgement should one decide to sample the extensive wine selection before 10am on a weekday. The best sort of place will do them all. Classified, it was an honour to have my very first meal that I ever did eat in Hong Kong, in your top quality establishment.
